So, a while back I had a fantastic peanut butter sandwich cookie from the ever-awesome Acme Cafe and the next day I went and had some very tasty Mexican food, and the guacamole set me thinking…
Hence, sweet and savory meet again!
Ingredients (The Cookie)
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup butter, softened
1 1/2 cups white sugar
1 egg
1/2 teaspoon vanilla extract
Zest of one large lime, finely minced
3 tbsp lime juice
½ cup unsweetened toasted coconut
Directions
1. Preheat oven to 350 degrees. Line cookie sheets with parchment paper.
2. In a small bowl, stir together flour, baking soda, baking powder and salt. Set aside.
3. Using a mixer, beat together the butter and sugar until smooth and very fluffy.
4. Beat in egg, vanilla extract, lime juice and lime zest.
5. Gradually blend in the dry ingredients and toasted coconut.
6. Roll rounded teaspoonfuls of dough into balls. Place on cookie sheets about 1 1/2 inches apart.
7. Bake 8 to 10 minutes in the preheated oven, or until lightly browned.
8. Let stand on cookie sheet two minutes before removing to cool on wire racks.
Ingredients (The Icing)
8 ounces avocado meat, approximately 2 small to medium
2 teaspoons freshly squeezed lemon juice
1 pound powdered sugar, sifted
1 1/2 tsp of lemon zest
Directions
Peel and pit the avocado. Place in a large bowl, mash, and then along with the lemon juice, beat until lightened in color, around 2 to 3 minutes. Add the powdered sugar a little at a time and beat until smooth. Add lemon zest. If not using right away, store in the refrigerator.
Last, but not least, chill the icing for a bit, and once the cookies have cooled completely, take one, add a dollop of icing, place a second cookie on top, twisting it to even out the icing.
Cookie’s done. Eat the heck out of them.
